BLUEBERRY BUTTER AND CARAMELISED ONIONS IN BEER AND RAW SUGAR

Ingredients

200 g of Osom blueberries
250 gr of unsalted butter
20 g of vegetable oil

250 gr of onion
300 ml of black beer.
180 gr of brown sugar
20 grams of salt
Pepper to taste

Step 1

In a bowl, place the butter at room temperature, you’re going to use this later. Cut the onion into fine julienne strips and sauté the onions over medium heat in a saucepan. Add the beer and brown sugar, stir this sometimes so it does not stick.

Step 2

When the beer mix has reduced by half, add the blueberries, salt and pepper. Continue to cook until the liquid of the mix has reduced itself completely. Add the butter while its still hot and refrigerate immediately.

To help the onion cook, you can add a pinch of salt from the beginning. This will help dehydrate the onion and speed up the cooking process.

For the butter to be uniform, it should be mixed from time to time before it solidifies in the fridge.
